On-Site Crawfish Cookin’

No one does on-site crawfish cookin’ better than Crawdad’s! It’s our claim to fame and part of the reason why we’re so popular for catering events.

The Crawdad’s! cookin’ approach starts with our “fresh” method. We don’t cook in advance; we ship in pounds of fresh crawfish directly from Louisiana on the day of your event. That way, you get to enjoy the cleanest, liveliest, and healthiest crawfish.

We’ll handle each crawfish by hand at our cleaning station. They’ll be sorted and washed there, with any debris and dead crawfish pulled out. Once they’re sorted and washed, they’ll get a final wash and go into the boiler.

Our boiling method is done in three stages:

The crawfish are first boiled in heavily seasoned water.
They’re then soaked in more seasoned water to ensure the flavor is fully absorbed.
After that, you’ll get the option of our traditional New Orleans seasoning. This recipe combines a blend of cayenne pepper, salt, garlic, onion, and eight other herbs and spices.
